France goes organic

Today we visited an organic store in Lyon and asked the manager some questions. He told us that more and more people in France are starting to eat organic food, “but mostly woman with children and gay men visit our shop”. He quickly added that this is starting to change and that a broader group of people is visiting the shop.
The shop is part of a bigger store chain in France, started by a couple that wanted to eat more organic food. Until this year they only had shops in Paris, but they’re growing so fast that they opened shops in Lyon, Marseille, Versailles, Boulogne, and many other cities this year.
To me it’s clear that the demand for organic food in France is growing very fast. Every single big supermarket has a special spot for organic food and every town has a few organic shops (I’ve already seen five in Lyon!). It makes me wonder if the supply of organic food meets the demand, but I really don’t think so. I think the demand for organic food is growing very fast and the supply just can’t keep up. How else is a small company able to open new stores in at least four big cities over just a couple of months?
French people are starting to care more about their health and the environment, and are starting to eat more and more organic food. I can only hope this is true for the rest of the world too!
